Stuffed Eggplant

Serves 4 entrée or 2 main meals.

Stuffed EggplantIngredients

  • 1 large Eggplant
  • 1 cup chopped deli ham (optional)
  • 400g can tomatoes, diced
  • 1 clove garlic, pressed
  • salt and pepper to taste
  • 1/4 cup parmesan cheese, grated
  • 1 tbsp chopped fresh basil
  • parmesan cheese, extra

Instructions

Preheat wood fire oven to 180 degrees.

Cut green tip off eggplant and cook in oven for 20mins or until tender. Use a rectangle terracotta dish.

Cut the eggplant in half lengthways and scoop out flesh, leaving a shell 1 cm thick.

Chop the flesh and combine with the rest of the ingredients.

Pile the mixture into the eggplant shells.

Sprinkle with Parmesan cheese and cook at the back of the oven for approx 10mins.

 

If eating as a main meal, serve with a fresh garden salad.
